Vegetable Surprise
Ingredients
In a large, shallow aluminium casserole disk (pan) mix together:
- 6 cups unpeeled, sliced and quartered small zucchini
- 6 cups summer squash sliced and quartered
- 1 large sweet onion, peeled, sliced thin and quartered
- 8 – 10 Roma tomatoes, peeled, seeded and coarsely chopped
- 1 cup fresh chopped dill
- 1 tablespoon salt
Topping
- 1 loaf squishy white bread, torn into small pieces
- 1/4 lb extra sharp grated cheddar cheese (This is important)
- 1/2 pound melted butter
- 1 cup fresh chopped dill
Preparation
- Tear bread into a large bowl.
- Grate cheese, chop dill and mix around into bread
- Pour in melted butter and toss all together.
- Spread the bread, cheese, etc. on the vegetables
- Bake at 350 for 50 minutes.
